Pistachio & Meyer Lemon Mousse Cakes Recipe

Ingredients:

For the Pistachio Cake:
– 1 cup shelled pistachios, finely ground
– 1 cup all-purpose flour
– 1 1/2 tsp baking powder
– 1/4 tsp salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 3 large eggs
– 1 tsp vanilla extract
– 1/2 cup milk

For the Meyer Lemon Mousse:
– 1 cup heavy cream
– 1/2 cup powdered sugar
– Zest of 2 Meyer lemons
– 1/4 cup Meyer lemon juice (from about 2 lemons)
– 1 tsp gelatin powder
– 2 tbsp cold water
– Yellow food coloring (optional)

For the Pistachio Garnish:
– 1/2 cup shelled pistachios, chopped
