Blood Sugar-Lowering Lentil Soup Recipe for Diabetes Management

Ingredients:

– 1 cup dried lentils
– 4 cups vegetable broth
– 1 onion, finely chopped
– 2 carrots, diced
– 2 celery stalks, chopped
– 3 cloves garlic, minced
– 1 can (14 oz) diced tomatoes
– 1 tsp cumin
– 1 tsp paprika
– 1/2 tsp turmeric
– Salt and pepper to taste
– Fresh parsley for garnish

 

Directions:

1. Rinse the lentils under cold water and drain.
2. In a large pot, sauté the onion, carrots, and celery until softened, about 5 minutes.
3. Add the minced garlic and cook for another minute.

4. Stir in the dried lentils, vegetable broth, diced tomatoes, cumin, paprika, turmeric, salt, and pepper.
5. Bring the soup to a boil, then reduce the heat to low and let it simmer, covered, for 30-40 minutes, or until the lentils are tender.
6. Taste and adjust seasoning if necessary.
7. Serve hot, garnished with fresh parsley.
