Ingredients
For the Apple Cinnamon Cake:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 3 large apples (Granny Smith or Honeycrisp), peeled, cored, and finely diced
- 1 tbsp lemon juice
For the Strawberry Purée:
- 1 1/2 cups fresh strawberries, hulled
- 2 tbsp granulated sugar
- 1 tsp lemon juice
For Garnish (optional):
- Powdered sugar, for dusting
- Fresh strawberries or apple slices, for decoration
Instructions
Step 1: Prepare the Strawberry Purée
- Blend the Strawberries: In a blender or food processor, combine the fresh strawberries, granulated sugar, and lemon juice. Blend until smooth.
- Strain the Purée: For a smoother sauce, strain the purée through a fine mesh sieve to remove the seeds. Set aside the purée to drizzle over the cake later.
Step 2: Prepare the Apple Cinnamon Cake
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Prepare the Apples: Peel, core, and finely dice the apples. Toss them in 1 tbsp lemon juice to prevent browning and set aside.
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- Cream the Butter and Sugars: In a large bowl, beat the butter, granulated sugar, and brown sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- Combine the Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined—do not overmix.
- Fold in the Apples: Gently fold the diced apples into the batter until evenly distributed.
Step 3: Bake the Cake
- Pour the Batter: Pour the apple cinnamon batter into the prepared cake pan, smoothing the top with a spatula.
- Bake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
