Ingredients

For the Apple Cinnamon Cake:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 3 large apples (Granny Smith or Honeycrisp), peeled, cored, and finely diced
  • 1 tbsp lemon juice

For the Strawberry Purée:

  • 1 1/2 cups fresh strawberries, hulled
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

For Garnish (optional):

  • Powdered sugar, for dusting
  • Fresh strawberries or apple slices, for decoration

Instructions

Step 1: Prepare the Strawberry Purée

  1. Blend the Strawberries: In a blender or food processor, combine the fresh strawberries, granulated sugar, and lemon juice. Blend until smooth.
  2. Strain the Purée: For a smoother sauce, strain the purée through a fine mesh sieve to remove the seeds. Set aside the purée to drizzle over the cake later.

Step 2: Prepare the Apple Cinnamon Cake

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Prepare the Apples: Peel, core, and finely dice the apples. Toss them in 1 tbsp lemon juice to prevent browning and set aside.
  3. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Cream the Butter and Sugars: In a large bowl, beat the butter, granulated sugar, and brown sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
  5. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  6. Combine the Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined—do not overmix.
  7. Fold in the Apples: Gently fold the diced apples into the batter until evenly distributed.

Step 3: Bake the Cake

  1. Pour the Batter: Pour the apple cinnamon batter into the prepared cake pan, smoothing the top with a spatula.
  2. Bake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  3. Cool: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
