Cheesecake Filling:
– 3 cups cream cheese, softened
– 1 cup granulated sugar
– 1 cup smooth peanut butter
– 1 teaspoon vanilla extract
– 3 large eggs
– 1/2 cup heavy cream

Caramel Layer:
– 1 cup granulated sugar
– 6 tablespoons unsalted butter, cubed
– 1/2 cup heavy cream

Topping:
– 2 bananas, sliced
– 1/4 cup chopped peanuts
– Caramel sauce

Instructions:

Crust:
1. Preheat your oven to 325°F (160°C).
2. In a medium bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

Cheesecake Filling:
1. In a large mixing bowl, beat together the softened cream cheese and granulated sugar until smooth and creamy. Add the peanut butter and vanilla extract, mixing until everything is fully incorporated.
2. Add the eggs one at a time, beating well after each addition. Stir in the heavy cream until the batter is smooth and well-blended.
3. Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes, or until the center is set and slightly jiggly. Allow the cheesecake to cool to room temperature before refrigerating it for at least 4 hours or overnight.
