Crafting the Perfect Homemade Tomato Sauce

  1. Prepare the Tomatoes:
    • Blanch the tomatoes to peel them easily. Cut a small “x” at the bottom of each tomato and drop them into boiling water for about 30 seconds or until the skin starts to peel away. Remove and place them in cold water. Peel off the skins.
    • Remove the seeds and roughly chop the tomatoes.
  2. Cook the Base:
    • In a large pot, heat the olive oil over medium heat.
    • Add the chopped onions and cook until they are soft and translucent, about 5 minutes.
    • Stir in the minced garlic and cook for another minute until fragrant.
  3. Simmer the Sauce:
    • Add the chopped tomatoes to the pot.
    • Stir in the basil, salt, pepper, and a pinch of sugar if using.
    • Reduce the heat to low and let the sauce simmer for about 30 minutes, stirring occasionally. The longer it simmers, the better the flavors will meld together.
