Had this for brunch with friends the other day, and they couldn’t get enough!

Breakfast Sausage and Hash Brown Egg Muffins

Ingredients

  • 2 cups thawed hash browns
  • 1/2 pound breakfast sausage, crumbled
  • 1/2 cup minced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley (optional)
