Instructions:

1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. Mix dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
3. Combine wet ingredients: In a large bowl, beat together the oil and sugar until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
4. Add dry ingredients to wet ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.

 

5. Fold in carrots, nuts, and raisins: Stir in the grated carrots, chopped walnuts, and raisins until evenly distributed throughout the batter.
