Sweet Chili Pineapple Sauce
Servings: Approximately 3 cups
Ingredients
1 cup fresh pineapple, finely chopped
1/2 cup apple cider vinegar
1/2 cup brown sugar
1/3 cup chili sauce
1 tablespoon soy sauce
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1/2 teaspoon red pepper flakes (optional for extra heat)
2 tablespoons cornstarch dissolved in 2 tablespoons water
Directions
1. In a medium saucepan, combine pineapple, apple cider vinegar, brown sugar, chili sauce, soy sauce, minced garlic, and ginger.
2. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes, stirring occasionally.
3. If you like a spicier sauce, add red pepper flakes according to your preference.
4. Stir in the cornstarch and water mixture and continue to simmer for another 5 minutes, or until the sauce thickens to your liking.
5. Remove the sauce from heat and let it cool slightly before transferring it to clean, sterilized mason jars.
6. Seal the jars and let them cool completely before storing in the refrigerator.
Variations & Tips
For a tropical twist, try adding some mango or peach to the mix. If you’re not a fan of heat, you can omit the red pepper flakes or add more brown sugar for a sweeter sauce. To make it more savory, a splash of Worcestershire sauce can do wonders. And for those who love a smoky flavor, a bit of smoked paprika will transform the sauce beautifully.
