Made from scratch chocolate coconut bars

Following a Recipe in a Methodical Manner

Step 1: Prepare the Coconut Filling

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir well to ensure that the coconut is fully covered by the condensed milk.

Shape the coconut mixture into small rectangular bars using your hands. Spread them out on a baking sheet lined with parchment paper. You can make them any size you prefer, depending on your preferences.

Chill the coconut bars in the refrigerator for at least 30 minutes. This helps them become more rigid, making the chocolate coating easier.

Step 2: Melt the Chocolate

Melt the chocolate chips in a heatproof bowl using the double boiler method. Take care to prevent the bottom of the bowl from touching the hot water in the pan. Stir the chocolate until fully melted and smooth.

If you prefer, you can melt the chocolate in the microwave. Place the chocolate in a microwave-safe bowl and heat for 30-second intervals, stirring after each, until fully melted.

For a smoother, shinier chocolate coating, you can add 2 tablespoons of coconut oil to the melted chocolate.

Step 3: Coat the Bars

Dip each chilled coconut bar into the melted chocolate using a fork to ensure it’s fully coated. Allow the excess chocolate to drip off before placing the coated bar back on the parchment-lined baking sheet.

Repeat the process for all the coconut bars. If the chocolate starts to harden, gently reheat it using the double boiler or microwave method.

Once all bars are coated, place the baking sheet back in the refrigerator to allow the chocolate to fully harden. This usually takes 15-20 minutes.

Step 4: Serve and Store

For a refreshing treat, enjoy the coconut chocolate bars straight from the refrigerator. Alternatively, for a softer texture, let them sit at room temperature before serving.

Storage:

Store the bars in an airtight container in the refrigerator for up to 2 weeks. For longer storage, they can be frozen.
