My hubby can never get enough of this sauce! He says it’s his fave!

– 2 lbs beef tips or stew meat, cut into bite-sized pieces
– 1/4 cup balsamic vinegar
– 3 tablespoons soy sauce
– 2 tablespoons honey
– 2 tablespoons olive oil
– 3 garlic cloves, minced
– 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
– 1/2 teaspoon black pepper
– 1/2 cup beef broth
– 1 onion, chopped
– Salt, to taste
– 2 tablespoons cornstarch (optional, for thickening)
Directions
1. In a mixing bowl, whisk together balsamic vinegar, soy sauce, honey, olive oil, minced garlic, rosemary, and black pepper.
2. Place the beef tips and chopped onion into the slow cooker.
3. Pour the vinegar and herb mixture over the beef and onions, tossing to ensure the beef is well-coated.
4. Add the beef broth to the mixture and stir gently.
5. Set your slow cooker to low and let it work its magic for 7-8 hours or on high for about 4 hours, until the beef is tender and flavorful.
6. For a thicker gravy, about 30 minutes before serving, mix the cornstarch with an equal amount of water to create a slurry and stir it into the slow cooker. Allow the dish to thicken by continuing to cook on high.
7. Taste and season with additional salt if necessary.
8. Serve hot over your chosen side dish.
Variations & Tips
– If beef tips aren’t available, you can use chuck roast cut into chunks—it’s usually more economical and just as tasty.
– You can play with the herbs depending on what’s in your pantry; thyme also works wonderfully with beef.
– Feel free to throw in some mushrooms during the last hour of cooking for an earthy twist to the dish.
– If you’re prepping for the upcoming week, this dish freezes beautifully. Just portion it out after cooking and you’ll have ready-to-go meals.
– A splash of red wine in the slow cooker can up the depth of flavor for those who want a more robust gravy.
