Method of Preparation

  1. In a pan, dissolve the cornstarch in the coconut milk, then add the milk, condensed milk, sifted egg yolks, and grated coconut.
  2. Cook over low heat, stirring constantly until the mixture thickens.
  3. Turn off the heat and let the mixture cool.
  4. In a medium ovenproof dish, alternate layers of cornstarch biscuits, cream, and diced pineapple until all ingredients are used, ending with a layer of cream.
  5. Decorate the top with grated coconut and pineapple pieces.
  6. Refrigerate for 2 hours before serving to allow the flavors to meld and the dessert to set.
