Refreshing Lemon Mango Cheesecake

Instructions:

1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.

2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan to form the crust.

3. In a large mixing bowl, beat the cream cheese and 1 cup sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract, lemon zest, and fresh lemon juice.

4. Gently fold in diced mango and mango puree until evenly distributed.

5. Pour the cheesecake mixture over the crust in the springform pan and smooth the top with a spatula.

6. Bake in the preheated oven for 50-55 minutes, or until the center is almost set but still slightly jiggly.

7. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to gradually cool.

8. Remove the cheesecake from the oven and cool completely on a wire rack. Refrigerate for at least 4 hours, preferably overnight, to let it set fully.

9. Before serving, garnish with fresh mango slices and lemon zest for a beautiful and tasty presentation.
