Savory Reuben Egg Rolls

Instructions:

1. Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface with a corner pointing towards you.

2. Add the Fillings: Place a slice of corned beef in the center of the wrapper, then add a spoonful of sauerkraut and a handful of shredded Swiss cheese. Drizzle with a bit of Thousand Island dressing.

3. Roll and Seal: Fold the bottom corner of the wrapper over the filling, fold in the sides, and roll it up tightly. Brush the top corner with the beaten egg to seal the roll. Repeat for the remaining wrappers and fillings.

4. Fry to Golden Perfection: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the egg rolls in small batches until they turn golden brown and crispy, about 3-4 minutes per batch.
