Savory Zucchini and Comté Cheese Biscuits

Ingredients:
– 2 large eggs
– 140g all-purpose flour
– 120g unsalted butter, melted
– 90 g grated Comté cheese
– 43 g almond flour
– 3 g baking powder
– Salt and pepper to taste
– 1 zucchini, grated

Instructions:

1. Prepare Butter: Melt the butter in the microwave for 30 seconds, then set it aside to cool slightly.

2. Combine Dry Ingredients: In a large bowl, mix together the flour, almond flour, grated Comté cheese, baking powder, salt, and pepper.

3. Incorporate Butter: Using your fingertips, gently work the melted butter into the dry mixture until it resembles coarse crumbs.

4. Add Eggs: Beat the eggs and incorporate them into the mixture one at a time, stirring until a smooth and homogeneous batter forms.

5. Fold in Zucchini: Gently fold in the grated zucchini, making sure it’s evenly mixed throughout the batter.

6. Fill the Molds: Spoon the batter into madeleine molds, filling each one about three-quarters full.

7. Bake: Bake in a preheated oven at 180°C (350°F) for 20 minutes, or until the biscuits are golden and a toothpick inserted into the center comes out clean.
