Spinach and Feta Stuffed Chicken Rolls

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and cook until the onion becomes translucent.

3. Add the chopped spinach to the skillet and cook until wilted. Set aside to cool slightly.

4. In a bowl, mix the cooled spinach with crumbled feta cheese and sun-dried tomatoes. Season the mixture with salt and pepper to taste.

5. Butterfly each chicken breast and pound them until evenly thick.

6. Spread the spinach and feta mixture onto each chicken breast, then roll them up tightly and secure with toothpicks.

7. Arrange the stuffed chicken breasts in a baking dish with the seam side down.

8. Bake for 25-30 minutes, or until the chicken is fully cooked and the juices run clear.
