1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg, whisked
1 1/4 cups reduced-fat cultured buttermilk
Dash of vanilla extract
Vegetable oil, for deep-frying
For the topping:1/3 cup granulated sugar
2 teaspoons cinnamon
Instructions:
1. Peel and core the fresh pineapples. Cut them into rings about 1/4 inch thick. Pat them dry with paper towels.
2. In a mixing bowl, whisk together the flour, sugar, cinnamon, nutmeg, baking powder, and salt.
3. Add the whisked egg, buttermilk, and vanilla extract to the dry ingredients. Mix until you have a smooth batter.
4. Heat vegetable oil in a deep frying pan to around 350°F (175°C).
5. Dip the pineapple rings into the batter, ensuring they are coated evenly.
6. Carefully place the coated pineapple rings into the hot oil and fry until they turn golden brown, about 2-3 minutes per side. Fry a few at a time, ensuring not to overcrowd the pan.
7. Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate or baking sheet to drain excess oil.
8. In a dish, mix together the sugar and cinnamon for the topping.
9. While the fritters are still warm, roll them in the cinnamon-sugar mixture until coated.
